Bird Brain lefse wrap - fig and caramelized shallot relish

Apparently, Viking Soul Food has got one of the best new dishes in Portland.  Our Bird Brain lefse wrap has been causing quite a stir in the streets.

Starting from the base and building up - you're seeing our handmade fresh lefse, cracked black pepper chevre, lacy green cabbage, bitey arugula, surkal brings crunch and a hit of tang, on top of that is slow-roasted chicken (both dark and white meat), smoked fig and caramelized shallot relish settles over the chicken, then walnuts and bacon provide texture and flavor balance. The Bird Brain lefse wrap sends tastebuds on a journey through a chicken-laden fig forest at the very least.
